Easter Pancakes Recipe

Image
Hello Cakey Friends! I hope you're having a fantastic Easter long weekend! Thought I would quickly share with you my Easter pancakes. My kids (and husband) love these as a fun family Easter morning breakfast treat! Why not make some for breakfast or lunch this weekend?! I have always wanted to try this out after seeing countless teddy bear faced pancakes in my various news feeds over the years (you have seen them too right?) Well this weekend I FINALLY tried it out. And as you can see it really does work! The trick is to put some of your pancake batter into a piping bag or a sauce bottle. I find the piping bag works best for me (phew another way to justify all my cake decorating equipment purchases to the hubby!) Then p ipe your chosen design onto your low-medium heat greased pan. Let the design cook for a bit until you see the edges starting to brown. Grab a spoon and pour some batter over the top of your precooked cooked design. Cook and flip the pancake as you...

How much are your cakes? Can I please order?

Image
On a weekly basis I get requests for cake orders, wedding cakes, birthday cakes, christening cakes... but at this stage of my cake decorating journey I do not sell my cakes. I don't have a registered kitchen and this is my hobby, and as soon as you start putting financial pressure on my decorating I would no longer enjoy it. So I thought it would be a great idea to list some of the fabulous local business' who network with me on a regular basis. These lovely local cake makers have a strong social networking presence and can all be found on facebook. The list is by no means a recommendation, just a simple directory to help you make contact with each business individually, to find the one that suits your personal needs.  So if you really cannot make your own cake and need assistance from a professional then try out my Local directory for Cairns, Queensland. To access the Local Cake Decorators Directory click "Local Directory" Tab above or... And...

So there you have it! Another valuab...

Easy Rum Balls Recipe with Variations

Image
It's the Christmas season and everyone I know is making rum balls!!! Okay not everyone but it certainly does appear that way on my facebook and Instagram newsfeed! We have a tradition in our family to make anything goes balls. What's that you ask? Well it's pretty much using what ever liquor we have in the house. I don't drink rum so don't want to waste money just for a few tablespoons.  (You know I like saving money! ) Past Christmas balls making we've used Frangelico,  Baileys,  Kahluha, and this year it looks to be Chamfords Raspberry Liqueur.   All very yummy but the key is not to put too much liquor in! If you put too much you're really just making chewable rum, it overpowers all the other flavours and you forget about the other delicious ingredients like coconut and chocolate. Traditional rum balls were made from left over fruit cake, add a bit of rum and much like our cake balls/ pops of today you mashed it together and made ba...

Quick Egg Free Gingerbread Recipe

Image
Just made some quick non gingerbread cookies with the kids. They are not my favourite recipe but they are egg free so I let the kids go silly eating the raw dough as we go! :) (they are also not a fan of ginger so I left it out and put 1/2 teaspoon of vanilla extract instead.) I am not sure how we will decorate this batch, I like using meringue powder to make royal icing (again with the raw egg consciousness in mind, I only use pasteurisrd powdered egg whites ) or maybe something a little bit easier and kid friendly like melted chocolate to glue on m&m's and currants, or even easier (because I have no lollies in my pantry today!) Cut out bits of coloured fondant. My plan is, over the next few days to test out a couple of different recipes for you and then have one blog post devoted to the icing methods I used. So here we go, Gingerbread Recipe #1 Preheat oven to 180°C Ingredients: 2/3 cup soft brown sugar 60g butter 4 tablespoons golden syrup 2 cups plain flou...

Bulk Wedding Cupcakes: Lace & Love

Image
I was asked 2 days before the Wedding to make some cupcakes for the dessert table at a family wedding.  Eeek 2 days didn't leave me much time to get too detailed so I had to come up with something that was simple, easy to mass produce and still look elegant. I made 150 of these lovlies and they were a hit! The visual of all 150 out on the table was really special and worked out as planned!  Now it wasn't all easy, I must admit, I made a huge mistake in the morning and baked 80 of these sad sunken cupcakes! To my horror I realised all too late that the 6th cup of flour to be folded in was in fact still waiting and sitting on the bench all the while the cupcakes were almost finished baking!! Eeeeek! What a disaster!  But what's a girl to do? Feed the rejects to her husband and kids and keep on baking!! Luckily I had enough ingredients on hand to make another batch! The topper designs I chose were simple cutters a heart and flower. But to dress them ...

Raspberry Liqueur Ganache

Image
I had grand plans to make my hubby a Black Forest Cake from scratch for his birthday this week! However,  a nasty headache and my son's sports carnival had other plans for me! I shopped around for all the ingredients and got talked into buying Black Raspberry Liqueur. I was originally hoping to find a cherry brandy but I don't even know if that exists! The Black Raspberry Liqueur looks like a fancy perfume bottle, I think you could have it sitting pretty on your dressing table and no one would know it was for night caps! (Just joking as I don't actually drink!) The smell was lovely,  if you're a fan of rasberry crushes and smoothies you'll love this adult version in a Cognac base. Black Raspberry Liqueur Now the whole point of this story is not about advertising liqueur is it? So back to my black forest cake that I didn't actually make! I decided that the cake can be made this weekend instead, it's a public holiday in Cairns for the Show, s...

Strawberry "No" Cake Pops

Image
Cake Pops are very popular at parties at the moment, in fact so are lollies and candy bars. My inner healthy voice screams out at me when I look at these gorgeously presented tables, asking "Where's the healthy options!? " I do love a good cake, but I also love to have healthy options. My kids love Strawberries,  they are low in sugar, high fibre, and loaded with nutrients.  So I decided to experiment with my cake pop alternative - Strawberry No - Cake Pops!  You can't get any healthier than these! I used ordinary drinking straws for the sticks. The result was yummy looking fresh strawberry pops... but then I thought I had to have a wicked version too, so pulled out the electric fondue maker I bought for $5 from Crazy Clarks. The results? YUMMY! ♥  Why not have both versions at your next party? ! A Few tips: * Use firm fresh Strawberries * The "healthier" chocolate to use is dark chocolate * When putting dipped strawberries i...

Cake Decor Cairns wishes you a Happy Mother's Day ♥

Image
Mother's Day Edible Gifts : Raspberry Buttercream I always love an opportunity to home bake gifts for my lovely friends and family,  and what better excuse is there to try Nutrafresh  Raspberry fruit powder than on Mother's Day? I made a normal batch of butter cream and at the end added a packet of Raspberry fruit powder and omg what can I say except YUM! The raspberry flavour was an explosion of yumminess in my mouth!  In true fresh raspberry fashion it had that distinct flavour and tang you would expect when eating fresh off the bush. Pair it with a moist chocolate cake and they marry perfectly on your palate!   Go on, order some and try it yourself. Keep in mind that it is a dry powder so once you add it to your icing it may need a little warm water added to it to bring it back to a silky consistency.  Here's a few photos of how I put it all together...
